Ingredients

Scale

1 ripe banana (mashed)

1 cup water

1 cup granulated sugar

1/2 tsp vanilla extract (optional)

1 cinnamon stick (optional)

Instructions

1. Combine mashed banana, water, and sugar in a small saucepan over medium heat.

2. Stir until sugar dissolves, then bring to a gentle simmer.

3. Add vanilla extract or cinnamon stick if using.

4. Simmer for 10–15 minutes until slightly thickened and fragrant.

5. Strain syrup through a fine mesh sieve into a clean jar.

6. Let cool, then refrigerate for up to 1 week.

7. Add 1–2 tablespoons to your coffee and enjoy!

Notes

Use very ripe (brown or speckled) bananas for the sweetest, most flavorful syrup.

Add a dash of lemon juice to extend shelf life and preserve color.

Try it in lattes, iced coffees, or over desserts like waffles or ice cream.
