½ cup sugar

¼ cup water

2 tbsp lemon juice

1 tsp lemon zest

(Optional) 1 tsp cornstarch + 2 tbsp water (for thickening)

Instructions

1. In a saucepan, combine blueberries, sugar, and water over medium heat.

2. Mash berries gently as mixture simmers.

3. After 8 minutes, stir in lemon juice and zest.

4. Simmer 2 more minutes and remove from heat.

5. Strain for smooth syrup or leave chunky.

6. (Optional) Add cornstarch slurry at minute 5 for thicker syrup.

7. Cool, then store in an airtight container.
