1½ cups full-fat cottage cheese

2 cups frozen berries (strawberries, blueberries, raspberries, or mix)

23 tbsp honey or maple syrup

1 tsp vanilla extract

Pinch of sea salt

Instructions

1. Add all ingredients to a high-speed blender.

2. Blend on high for 2–3 minutes until completely smooth and creamy.

3. Taste and adjust sweetness, if desired.

4. Enjoy immediately for soft-serve texture.

5. For scoopable ice cream, pour into loaf pan, cover, and freeze 3–4 hours.

6. Let sit at room temp for 10 minutes before scooping.
