2 ripe pitayas
1 cup cold water or coconut water
1 tbsp fresh lime juice
1 tbsp honey or agave syrup (optional)
Wash and slice pitayas lengthwise.
Scoop out the flesh into a blender.
Add water, lime juice, and honey.
Blend on high speed for 30-45 seconds until smooth.
Strain if preferred pulp-free.
Serve chilled.
