½ cup unsalted butter, softened
¾ cup brown sugar
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour

1 cup grated zucchini, excess moisture removed

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
