1 tbsp garlic-infused olive oil

1/2 cup chopped green leek tops

1 cup diced carrots

1/2 cup zucchini

2 cups cooked chicken breast

4 cups low FODMAP broth

1/4 cup canned coconut milk

Salt and pepper to taste

Chopped chives to garnish

Instructions

1. Heat garlic-infused oil in a large pot.

2. Add carrots and leek tops; sauté for 5 minutes.

3. Pour in broth and bring to a boil.

4. Add zucchini and cooked chicken; reduce to simmer.

5. Stir in coconut milk and season.

6. Simmer 15–20 minutes.

7. Garnish with chives and serve.

Notes

Store leftovers in the fridge for up to 4 days.
