Ingredients

Main Ingredients

  • 1 cup full-fat cottage cheese Can substitute with low-fat cottage cheese, but full-fat is recommended for richer flavor.
  • 2 large eggs (room temperature) Using room temperature eggs helps the batter blend more smoothly.
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional) Can be omitted based on preference.
  • 1/4 teaspoon dried oregano (optional) Feel free to experiment with different herbs or spices.

Method

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly oil it.
  • In a blender, combine the cottage cheese, eggs, salt, garlic powder, and oregano. Blend until smooth.
  • Pour the batter onto the baking sheet and spread it into a thin rectangle, about 1/4-inch thick.

Cooking

  • Bake for 35-40 minutes until the flatbread is golden and firm.
  • Allow it to cool completely before slicing.

Notes

This flatbread is incredibly versatile and can be served warm with hummus, topped with avocado, or as a base for mini pizzas. To store, let it cool completely and place in an airtight container for up to 3 days in the refrigerator, or freeze slices separated by parchment paper.
