Ingredients

For the chimichurri sauce

  • 1 cup fresh parsley, chopped
  • 2 tablespoons fresh oregano, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • to taste Salt and pepper

For the chicken

  • 2 pieces chicken breasts

Method

Preparation

  • In a bowl, mix chopped parsley, oregano, minced garlic, red pepper flakes, red wine vinegar, olive oil, salt, and pepper to make the chimichurri sauce.
  • Marinate the chicken breasts in half of the chimichurri sauce for at least 30 minutes.

Cooking

  • Preheat the grill and skewer the marinated chicken.
  • Grill the skewers until the chicken is cooked through, about 6-8 minutes per side.
  • Serve the grilled chicken slathered in the remaining chimichurri sauce.

Notes
