Method

Preparation

  • Preheat the oven to 400°F (200°C) and grease a 10x13-inch baking dish with cooking spray.
  • In a large mixing bowl, whisk together the beaten eggs and cottage cheese until smooth.
  • Stir in the shredded Monterey Jack cheese, chopped green chiles, and melted butter until well combined.
  • Add flour and baking powder to the mixture, folding them in gently.

Baking

  • Pour the mixture into the prepared baking dish, spreading it out into an even layer.
