Ingredients

Main Ingredients

  • 1 block feta cheese Use a good quality block of feta.
  • 4 large eggs Use fresh eggs for best results.
  • 1 cup cherry tomatoes, halved Any small tomatoes can be used.
  • 2 cups fresh spinach Can substitute with other leafy greens.
  • 2 tablespoons olive oil
  • to taste salt and pepper Adjust seasoning according to preference.
  • optional fresh herbs (like parsley or basil) For garnish.

Method

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes and fresh spinach.
  • Drizzle with olive oil and season with salt and pepper.

Baking

  • Bake in the preheated oven for about 20 minutes, until the tomatoes are bursting and the feta is softened.
  • Remove from the oven and crack the eggs directly on top of the feta and tomatoes.
  • Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.

Serving

  • Garnish with fresh herbs if desired, and serve warm.

Notes
