- 1 block feta cheese Use a good quality block of feta.
- 4 large eggs Use fresh eggs for best results.
- 1 cup cherry tomatoes, halved Any small tomatoes can be used.
- 2 cups fresh spinach Can substitute with other leafy greens.
- 2 tablespoons olive oil
- to taste salt and pepper Adjust seasoning according to preference.
- optional fresh herbs (like parsley or basil) For garnish.
Method
Preparation
- Preheat the oven to 400°F (200°C).
- In a baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes and fresh spinach.
- Drizzle with olive oil and season with salt and pepper.
Baking
- Bake in the preheated oven for about 20 minutes, until the tomatoes are bursting and the feta is softened.
- Remove from the oven and crack the eggs directly on top of the feta and tomatoes.
- Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your liking.
Serving
- Garnish with fresh herbs if desired, and serve warm.

Notes
Feel free to substitute different vegetables, and add red pepper flakes for heat. Make ahead by prepping feta and veggies earlier; add eggs and bake before serving.
