Ingredients
- 1 lb (450 g) ground or minced beef (85–90% lean)
- ¼ cup finely diced onion (optional)
- ¼ cup BBQ sauce, plus more to serve
- 1 tsp Worcestershire sauce
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¾ tsp kosher salt, or to taste
- ¼ tsp black pepper
- 4 large (10-inch) flour tortillas (or whole-wheat)
- 1½ cups shredded cheddar (or 4–6 American slices)
- ½ cup chopped dill pickles
- 1 cup shredded lettuce
- 1 small tomato, diced (optional)
- 1–2 tsp neutral oil or butter (for crisping)
- Tortilla Sauce:
- ⅓ cup mayonnaise
- 2 Tbsp ketchup
- 1 Tbsp BBQ sauce
- 1 tsp yellow mustard
- 1–2 tsp pickle juice or hot sauce, to taste

Method
- Heat a large skillet over medium-high. Brown beef with onion for 5–6 minutes, breaking it up as it cooks. Drain if needed, then season with salt and pepper; cook to 160°F.
- Stir in BBQ sauce, Worcestershire, Dijon, garlic powder, and smoked paprika. Simmer 1 minute, then remove from heat.
- In a small bowl, whisk mayonnaise, ketchup, BBQ sauce, mustard, and pickle juice until smooth.
- Warm tortillas slightly. Spread 1–2 tablespoons of tortilla sauce, add cheese, ½–¾ cup beef mixture, pickles, lettuce, and tomato. Fold sides in and roll tightly.
- Lightly oil skillet and cook wraps 1–2 minutes per side over medium heat until golden and cheese melts.
- Slice diagonally and serve warm with extra BBQ sauce or tortilla sauce for dipping.
