BBQ Cheeseburger Wrap (Minced Beef, 20 Minutes)

Ingredients

  • 1 lb (450 g) ground or minced beef (85–90% lean)
  • ¼ cup finely diced onion (optional)
  • ¼ cup BBQ sauce, plus more to serve
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¾ tsp kosher salt, or to taste
  • ¼ tsp black pepper
  • 4 large (10-inch) flour tortillas (or whole-wheat)
  • cups shredded cheddar (or 4–6 American slices)
  • ½ cup chopped dill pickles
  • 1 cup shredded lettuce
  • 1 small tomato, diced (optional)
  • 1–2 tsp neutral oil or butter (for crisping)
  • Tortilla Sauce:
  • cup mayonnaise
  • 2 Tbsp ketchup
  • 1 Tbsp BBQ sauce
  • 1 tsp yellow mustard
  • 1–2 tsp pickle juice or hot sauce, to taste

Method

  • Heat a large skillet over medium-high. Brown beef with onion for 5–6 minutes, breaking it up as it cooks. Drain if needed, then season with salt and pepper; cook to 160°F.
  • Stir in BBQ sauce, Worcestershire, Dijon, garlic powder, and smoked paprika. Simmer 1 minute, then remove from heat.
  • In a small bowl, whisk mayonnaise, ketchup, BBQ sauce, mustard, and pickle juice until smooth.
  • Warm tortillas slightly. Spread 1–2 tablespoons of tortilla sauce, add cheese, ½–¾ cup beef mixture, pickles, lettuce, and tomato. Fold sides in and roll tightly.
  • Lightly oil skillet and cook wraps 1–2 minutes per side over medium heat until golden and cheese melts.
  • Slice diagonally and serve warm with extra BBQ sauce or tortilla sauce for dipping.
