  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 3 carrots (sliced)
  • 3 potatoes (peeled and cubed)
  • 1 cup celery (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons all-purpose flour Or use cornstarch for a gluten-free option.
  • 2 tablespoons water For thickening.
  • 1 cup frozen peas
  • 1 leaf bay leaf

Method

Preparation

  • Heat the vegetable oil in a large pot over medium heat. Add the beef cubes, seasoning them with salt and black pepper. Cook until they are browned on all sides.
  • Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and fragrant.
  • Pour in the beef broth and stir in the tomato paste, dried thyme, paprika, and bay leaf.
  • Mix in the sliced carrots, cubed potatoes, and chopped celery.

Cooking

  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, until the beef is tender.
  • In a small bowl, mix the flour and water until smooth. Stir this mixture into the stew and let it cook for another 10 minutes to thicken.
  • Finally, stir in the frozen peas and cook for an additional 5 minutes.

Notes
