  • 1 cup black beans, canned or cooked
  • 1 cup rice Soaking for 30 minutes beforehand can help with even cooking.
  • 1 pound sausage, sliced Any type of sausage can be used; for a spicy twist, use chorizo.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 cups chicken or vegetable broth
  • as needed Chopped cilantro for garnish

Method

Preparation

  • In a large pot, heat some oil over medium heat. Add the onion and garlic, cooking until softened.
  • Add the sausage and brown it slightly.
  • Stir in the cumin, paprika, salt, and pepper.
  • Add the rice and stir to combine.
  • Pour in the broth and black beans, then bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked through.
  • Fluff with a fork and garnish with chopped cilantro before serving.
