Method

Preparation

  • Preheat the oven to 375°F (190°C) and grease an 8x8-inch baking dish with butter or cooking spray.
  • In a large mixing bowl, whisk together the cottage cheese, eggs, milk, maple syrup, and vanilla extract until well combined.
  • Stir in the rolled oats, baking powder, cinnamon, salt, and lemon zest until evenly mixed.
  • Gently fold in the blueberries so they are distributed throughout the batter.
  • Pour the mixture into the prepared baking dish and smooth the top evenly.

Baking

  • Bake for 30 to 35 minutes, or until the center is set and the top is lightly golden.
  • Let the bake cool for 10 minutes before slicing and serving.
