Method
Preparation
- In a blender, combine the cottage cheese, blueberries, honey, vanilla extract, and lemon juice. Blend until smooth and creamy.
- If using, gently fold in the whipped cream to lighten the mousse.
- Spoon the mixture into serving dishes and refrigerate for at least 30 minutes.
- Garnish with additional blueberries and mint leaves before serving.
