- 0.25 teaspoon Red Pepper Flakes (optional)
Vegetables
- 1 cup Spinach (wilted & squeezed dry)
- 2 tablespoons Chives (chopped)
Method
Preparation
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the Greek yogurt and eggs until well combined.
- In another bowl, mix the flour, ground flaxseed, baking powder, salt, garlic powder, and red pepper flakes.
- Gradually add the dry ingredients to the yogurt mixture, stirring until just combined.
- Gently fold in the wilted spinach, chives, and shredded cheese until evenly distributed.
Cooking
- Scoop the mixture onto the prepared baking sheet, forming small biscuits. Leave space between them as they will expand.
- Bake for about 15-20 minutes or until the tops are golden brown.
- Allow the biscuits to cool slightly before serving.
