Method
Preparation
- Cut the cucumber into long thin strips using a vegetable peeler or mandoline.
- In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, celery, salt, and pepper until well combined.
- Spread a small amount of the chicken mixture onto each cucumber strip and roll it up.
- Secure with a toothpick if needed and garnish with fresh parsley.
- Serve immediately as a healthy snack.
