- 1 cup rice Use any variety of white rice.
- 2 cups water For cooking the rice.
- 1 cup corn kernels (fresh or frozen) Fresh is preferred for sweetness.
- 2 tablespoons butter Can substitute with vegan butter for a vegan version.
- Salt to taste Adjust according to preference.
- Pepper to taste Freshly ground is recommended.
- Fresh parsley (for garnish, optional) Add color and freshness when serving.
Method
Preparation
- In a pot, bring the water to a boil. Add the rice and a pinch of salt.
- Reduce heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.
Cooking Corn
- While the rice is cooking, in a separate pan, melt the butter over medium heat.
- Add the corn kernels to the pan and sauté for about 5 minutes until heated through. Season with salt and pepper.
Serving
- Once the rice is cooked, fluff it with a fork and mix in the sautéed corn.
- Garnish with fresh parsley if desired and serve warm.

Notes
Rinse the rice before cooking to remove extra starch for fluffier rice. Feel free to experiment with different herbs or spices for added flavor. Use fresh corn in season for the sweetest taste; frozen corn works well too.
