Ingredients

Main Ingredients

  • 1 cup rice Use any variety of white rice.
  • 2 cups water For cooking the rice.
  • 1 cup corn kernels (fresh or frozen) Fresh is preferred for sweetness.
  • 2 tablespoons butter Can substitute with vegan butter for a vegan version.
  • Salt to taste Adjust according to preference.
  • Pepper to taste Freshly ground is recommended.
  • Fresh parsley (for garnish, optional) Add color and freshness when serving.

Method

Preparation

  • In a pot, bring the water to a boil. Add the rice and a pinch of salt.
  • Reduce heat to low, cover, and let it simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

Cooking Corn

  • While the rice is cooking, in a separate pan, melt the butter over medium heat.
  • Add the corn kernels to the pan and sauté for about 5 minutes until heated through. Season with salt and pepper.

Serving

  • Once the rice is cooked, fluff it with a fork and mix in the sautéed corn.
  • Garnish with fresh parsley if desired and serve warm.

Notes
