Ingredients

Main Ingredients

  • 1 small head cabbage Cut into quarters and removal of the core is necessary.
  • 1 tablespoon salt Used to draw moisture from the cabbage.
  • 1 tablespoon sugar Balances the tartness of the vinegar.
  • 1/4 cup rice vinegar Provides the pickling solution.

Optional Seasonings

  • to taste chili flakes Add for a spicy kick.
  • to taste sesame seeds Optional for added flavor.

Method

Preparation

  • Cut the cabbage into quarters and remove the core, then slice the cabbage into thin strips.
  • In a bowl, combine the salt and sugar. Toss the cabbage strips with this mixture and let it sit for 15-20 minutes to draw out moisture.
  • In another bowl, mix the rice vinegar with any additional seasonings you'd like, such as chili flakes or sesame seeds.

Mixing

  • After the cabbage has wilted, rinse it gently under cold water and drain.
  • Mix the cabbage with the vinegar mixture and let it sit for at least 30 minutes before serving to allow the flavors to develop.
