- 1 tablespoon salt Used to draw moisture from the cabbage.
- 1 tablespoon sugar Balances the tartness of the vinegar.
- 1/4 cup rice vinegar Provides the pickling solution.

- to taste chili flakes Add for a spicy kick.
- to taste sesame seeds Optional for added flavor.
Method
Preparation
- Cut the cabbage into quarters and remove the core, then slice the cabbage into thin strips.
- In a bowl, combine the salt and sugar. Toss the cabbage strips with this mixture and let it sit for 15-20 minutes to draw out moisture.
- In another bowl, mix the rice vinegar with any additional seasonings you'd like, such as chili flakes or sesame seeds.
Mixing
- After the cabbage has wilted, rinse it gently under cold water and drain.
- Mix the cabbage with the vinegar mixture and let it sit for at least 30 minutes before serving to allow the flavors to develop.

Notes
