Ingredients

  • 1 medium head medium head of cabbage, chopped
  • 1 cup onion, diced
  • 2 cups carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes drained
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

  • 1 cup shredded chicken, ground beef, or sausage optional

Method

Preparation

  • In a large pot, sauté onions, carrots, and celery until soft.
  • Add garlic and cook for another minute.

Cooking

  • Stir in the chopped cabbage, vegetable broth, and diced tomatoes.
  • Add thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the cabbage is tender.
  • If desired, add shredded chicken, ground beef, or sausage to the pot and cook until heated through.
