Method
Preparation
- In a large pot, sauté onions, carrots, and celery until soft.
- Add garlic and cook for another minute.
Cooking
- Stir in the chopped cabbage, vegetable broth, and diced tomatoes.
- Add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until the cabbage is tender.
- If desired, add shredded chicken, ground beef, or sausage to the pot and cook until heated through.
- Serve hot.
