Ingredients

  • 1 lb ground chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup bell pepper, diced
  • 1 cup diced tomatoes
  • 2 tbsp Cajun seasoning Adjust based on spice preference
  • 1/2 cup chicken broth
  • to taste Salt and pepper
  • 4 pieces brioche buns
  • 1 cup cheddar cheese, shredded
  • 1/2 cup milk
  • 2 tbsp butter
  • 1 tbsp flour

Method

Cooking the Filling

  • In a skillet, cook the onion, garlic, and bell pepper over medium heat until softened.
  • Add the ground chicken and cook until browned.
  • Stir in the Cajun seasoning and diced tomatoes.
  • Pour in the chicken broth and simmer for about 10 minutes.

Making the Cheese Sauce

  • In a separate saucepan, melt butter, add flour to make a roux, then gradually whisk in milk and stir until thickened.
  • Add the cheddar cheese to the sauce and mix until melted.

Assembly

  • Toast the brioche buns.
  • Assemble the sloppy joes by placing the chicken mixture on the bun, then drizzling with the cheddar cheese sauce.
