- 1 lb ground chicken
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup bell pepper, diced
- 1 cup diced tomatoes
- 2 tbsp Cajun seasoning Adjust based on spice preference
- 1/2 cup chicken broth
- to taste Salt and pepper
- 4 pieces brioche buns
- 1 cup cheddar cheese, shredded
- 1/2 cup milk
- 2 tbsp butter
- 1 tbsp flour
Method
Cooking the Filling
- In a skillet, cook the onion, garlic, and bell pepper over medium heat until softened.
- Add the ground chicken and cook until browned.
- Stir in the Cajun seasoning and diced tomatoes.
- Pour in the chicken broth and simmer for about 10 minutes.
Making the Cheese Sauce
- In a separate saucepan, melt butter, add flour to make a roux, then gradually whisk in milk and stir until thickened.
- Add the cheddar cheese to the sauce and mix until melted.
Assembly
- Toast the brioche buns.
- Assemble the sloppy joes by placing the chicken mixture on the bun, then drizzling with the cheddar cheese sauce.
