- 1 lb Smoked sausage Sliced
- 1 cup Rice Uncooked
- 2 medium Bell peppers Diced
- 1 tbsp Cajun seasoning Adjust to taste
- 1 medium Onion Diced
- 2 cloves Garlic Minced
- 2 cups Chicken broth Alternatively, use vegetable broth
- 2 tbsp Olive oil
- to taste tsp Salt
- to taste tsp Pepper
Method
Cooking
- In a large skillet, heat olive oil over medium heat.
- Add sliced smoked sausage and cook until browned.
- Stir in diced onion and bell peppers; cook until softened.
- Add minced garlic and cook for an additional minute.
- Stir in rice, Cajun seasoning, and chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
- Season with salt and pepper to taste.
- Serve hot.
