  • 1 cup Rice Uncooked
  • 2 medium Bell peppers Diced
  • 1 tbsp Cajun seasoning Adjust to taste
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 cups Chicken broth Alternatively, use vegetable broth
  • 2 tbsp Olive oil
  • to taste tsp Salt
  • to taste tsp Pepper

Method

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add sliced smoked sausage and cook until browned.
  • Stir in diced onion and bell peppers; cook until softened.
  • Add minced garlic and cook for an additional minute.
  • Stir in rice, Cajun seasoning, and chicken broth. Bring to a boil.
  • Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked.
  • Season with salt and pepper to taste.
  • Serve hot.
