Ingredients

For the Dough

  • 2 cups sourdough starter Make sure it’s active
  • 4 cups all-purpose flour
  • 1 cup warm water
  • 1 tablespoon salt
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil For caramelizing the onions
  • 1 cup aged gouda, grated

Method

Preparation

  • In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-30 minutes. Set aside to cool.
  • In a large bowl, combine the sourdough starter, warm water, and salt. Gradually add the flour and mix until a dough forms.
  • Knead the dough on a floured surface for about 10 minutes until smooth. Incorporate the cooled caramelized onions and grated Gouda into the dough.
  • Place the dough in a lightly greased bowl, cover with a cloth, and let rise for about 4-6 hours, or until doubled in size.

Baking

  • Preheat your oven to 450°F (230°C). Shape the dough into a loaf and place on a baking sheet or in a Dutch oven.
  • Bake for 30-35 minutes until golden brown and sounds hollow when tapped. Allow cooling before slicing.

Notes
