  • 1/3 cup shredded unsweetened coconut Extra for rolling.
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut for rolling For coating the balls.

Method

Preparation

  • In a food processor, combine the medjool dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, salt, and vanilla extract.
  • Blend until the mixture is well combined and holds together when pressed.
  • Use your hands to roll the mixture into small balls, about 1 inch in diameter.
  • Roll the balls in the extra shredded coconut to coat them evenly.
  • Place the energy balls on a plate or parchment paper and refrigerate for about 30 minutes to firm up.
