  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup marinara sauce
  • 1 cup cooked, chopped chicken or turkey (optional)
  • 1/2 cup almond flour or gluten-free breadcrumbs for topping

Method

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese, mozzarella cheese, Parmesan cheese, bell peppers, onions, Italian seasoning, salt, and pepper. If using, add the cooked chicken or turkey.
  • Spread half of the marinara sauce in the bottom of a greased casserole dish.
  • Pour the cottage cheese mixture over the marinara sauce in the dish.
  • Top with the remaining marinara sauce and sprinkle almond flour or gluten-free breadcrumbs on top.

Baking

  • Bake for 25-30 minutes, or until golden and bubbly.
  • Let it cool slightly before serving.
