Ingredients
- 1 cup mozzarella, cubed
- ½ cup grated parmesan
- 2 eggs, beaten
- ½ cup all-purpose flour
- 1 cup breadcrumbs (panko or Italian)
- ½ tsp garlic powder
- ½ tsp paprika
- salt and pepper, to taste
- oil for frying or spray oil for baking

Method
- Pat dry mozzarella cubes with paper towels.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with parmesan, garlic powder, paprika, salt, and pepper.
- Coat cheese cubes in flour, then dip in egg, then coat in breadcrumb mixture. Ensure each piece is well covered.
- Chill breaded bites in the refrigerator for 10 minutes to help coating stick.
- Fry at 350°F (175°C) for 45 seconds per side, or air fry at 400°F (200°C) for 8 minutes, or bake at 425°F (220°C) for 12 minutes until golden and crispy.
- Serve warm with your favorite dips like marinara, ranch, or garlic aioli.
