  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups ready rice (such as microwaveable rice) You can use leftover rice if available.

  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Cooking Instructions

  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Stir in the taco seasoning, black beans, corn, and ready rice. Mix until well combined.
  • Cook for about 5-7 minutes, stirring occasionally until heated through.
  • Sprinkle the shredded cheese over the mixture and cover the skillet until the cheese is melted, about 2-3 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with chopped cilantro and sour cream if desired.
