Ingredients

Main ingredients

  • 1 pound chicken, cut into pieces Use bone-in for more flavor.
  • 1 cup rice Any type of rice can work.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, chopped
  • 1 medium carrot, diced Add other vegetables for extra nutrition.
  • 1/2 cup cilantro, chopped Additional for serving.
  • 6 cups chicken broth
  • 1 teaspoon cumin

Method

Cooking

  • In a large pot, sauté the onion, garlic, and green bell pepper until soft.
  • Add the chicken pieces and cook until browned.
  • Stir in the diced carrot, cumin, salt, and pepper.
  • Pour in the chicken broth and bring to a boil.
  • Add the rice and reduce heat to a simmer. Cook until the rice is tender and the chicken is cooked through, about 20-25 minutes.
  • Stir in the chopped cilantro and lime juice before serving.

Notes
