- 1 lb chicken breasts Make sure to season well
- 1 cup salsa Consider using fresh or homemade salsa for better flavor
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 avocado (diced) For topping
- 1/4 cup cilantro (chopped) For dressing
- 2 tablespoons lime juice For dressing
- to taste salt and pepper For seasoning
- as needed Cooked rice or quinoa For serving
Method
Preparation
- Place the chicken breasts in a crockpot and pour the salsa over them.
- Add the black beans and corn to the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Once cooked, shred the chicken with two forks and mix everything together.
- In a small bowl, combine cilantro, lime juice, salt, and pepper for the dressing.
Serving
- Serve the chicken mixture over cooked rice or quinoa, topped with diced avocado and drizzled with cilantro lime dressing.

Notes
