Method
Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, cooked rice, diced tomatoes with green chilies, salsa, chili powder, cumin, salt, and pepper. Mix well.
- Pour the mixture into a greased 9x13 inch casserole dish.
- Sprinkle the shredded cheese evenly on top.
Cooking
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.
- If desired, top with crushed tortilla chips before serving.
