- 2 cups cooked chicken, shredded Use rotisserie chicken for a quicker option.
- 1 cup cream of chicken soup Can be substituted with cream of mushroom or cheese sauce.
- 1 cup sour cream
- 1 cup frozen mixed vegetables Feel free to add any leftover vegetables.
- 2 cups cooked rice Can be replaced with quinoa or pasta.
- 1 cup shredded cheddar cheese More cheese can be added for extra flavor.
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs Optional for topping.
Method
Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, frozen vegetables, cooked rice, cheddar cheese, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
- Pour the mixture into a greased 9x13 inch baking dish.
- If desired, sprinkle breadcrumbs on top.
- Bake in the preheated oven for 25-30 minutes or until the casserole is heated through and the top is golden brown.
- Let it cool for a few minutes before serving.

Notes
