  • 2 cups mixed greens (like spinach and arugula) Choose seasonal greens for maximum flavor.
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup salad dressing of choice (like ranch or vinaigrette) Experiment with different dressings.

Method

Preparation

  • Start by choosing your mason jar. A quart-sized jar works well.
  • Pour the salad dressing into the bottom of the jar.
  • Next, add the red onion on top of the dressing.
  • Add the cucumbers and shredded carrots next.
  • Layer the cherry tomatoes over the veggies.
  • Add the cooked chicken on top of the tomatoes.
  • Finally, pack the mixed greens on top. If you're using feta cheese, sprinkle it over the greens.
  • Seal the jar tightly and refrigerate until you’re ready to eat.
