- 1 cup cottage cheese Use low-fat or regular based on preference
- 1 cup rolled oats Can substitute with gluten-free oats if needed
- 1/2 cup applesauce or grated apple Fresh apple gives a nice texture
- 1 large egg
- 1/2 tsp cinnamon Adjust to taste
- 1 tbsp honey or maple syrup Optional for added sweetness
- 1/2 tsp baking powder
- a pinch salt
Method
Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
Baking
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes
Enjoy warm or store in the fridge for up to 4 days. Can be frozen for longer storage by wrapping individually in plastic wrap and placing in a freezer bag.
