Ingredients

Main Ingredients

  • 1 cup cottage cheese Use low-fat or regular based on preference
  • 1 cup rolled oats Can substitute with gluten-free oats if needed
  • 1/2 cup applesauce or grated apple Fresh apple gives a nice texture
  • 1 large egg
  • 1/2 tsp cinnamon Adjust to taste
  • 1 tbsp honey or maple syrup Optional for added sweetness
  • 1/2 tsp baking powder
  • a pinch salt

Method

Preparation

  • Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  • In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
  • Allow the batter to sit for 5 minutes to let the oats absorb some moisture.

Baking

  • Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
  • Bake for 18–20 minutes or until the bites are set and lightly golden on top.
  • Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes
