- 1 large egg
- ½ cup unsalted butter, melted Make sure the butter is melted but not too hot.
- ¼ cup honey Can substitute with maple syrup for a different flavor.
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour Can substitute with gluten-free flour blend.
- 1 cup light brown sugar, packed
- ½ teaspoon salt
- 1 teaspoon ground cinnamon, divided Used in the batter and for topping.
- 3 tablespoons granulated sugar (for topping) Can substitute with brown sugar for richer flavor.
Method
Preparation
- Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a bowl, whisk the melted butter and brown sugar together until well combined.
- Add the egg, honey, and vanilla extract. Whisk until everything is mixed together smoothly.
- Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined. Do not overmix.
- Pour the batter into the prepared baking pan.
- In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it over the batter.
- Bake for 22–25 minutes. Check if they are done by inserting a toothpick in the center; it should come out clean.
- Let the blondies cool completely before cutting into squares.

Notes
Serve warm or at room temperature. For an extra treat, enjoy with vanilla ice cream or whipped cream. Dusting with powdered sugar adds a nice touch. Store in an airtight container at room temperature for up to 4 days or in the fridge for up to a week. Freezing is also an option for up to three months.
