  • 1 large egg
  • ½ cup unsalted butter, melted Make sure the butter is melted but not too hot.
  • ¼ cup honey Can substitute with maple syrup for a different flavor.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup light brown sugar, packed
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon, divided Used in the batter and for topping.
  • 3 tablespoons granulated sugar (for topping) Can substitute with brown sugar for richer flavor.

Method

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a bowl, whisk the melted butter and brown sugar together until well combined.
  • Add the egg, honey, and vanilla extract. Whisk until everything is mixed together smoothly.
  • Stir in the flour, salt, and ½ teaspoon of cinnamon until just combined. Do not overmix.
  • Pour the batter into the prepared baking pan.
  • In a small bowl, mix the granulated sugar with the remaining ½ teaspoon of cinnamon and sprinkle it over the batter.
  • Bake for 22–25 minutes. Check if they are done by inserting a toothpick in the center; it should come out clean.
  • Let the blondies cool completely before cutting into squares.

Notes
