Ingredients

Filling

  • 2 cups fresh or frozen blueberries If using frozen, thaw and drain excess liquid.
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pie crust store-bought or homemade

Crumb Topping

  • 1 cup oatmeal
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup butter melted

Method

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
  • Pour the blueberry mixture into the pie crust.
  • In another bowl, mix the oatmeal, flour, brown sugar, and melted butter until crumbly.
  • Sprinkle the crumble topping over the blueberries.

Baking

  • Bake for 15 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 25-30 minutes until the filling is bubbling and the topping is golden brown.
  • Remove from the oven and let cool before serving.
