Ingredients
Filling
- 2 cups fresh or frozen blueberries If using frozen, thaw and drain excess liquid.
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 pie crust store-bought or homemade
Crumb Topping
- 1 cup oatmeal
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup butter melted
Method
Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
- Pour the blueberry mixture into the pie crust.
- In another bowl, mix the oatmeal, flour, brown sugar, and melted butter until crumbly.
- Sprinkle the crumble topping over the blueberries.
Baking
- Bake for 15 minutes, then lower the temperature to 350°F (175°C) and bake for an additional 25-30 minutes until the filling is bubbling and the topping is golden brown.
- Remove from the oven and let cool before serving.
