- 1.5 lbs Italian Sausage (mild or hot, cut into 1-inch pieces) Use your preferred spice level.
- 2 lbs Yukon Gold Potatoes (scrubbed and cut into 1-inch cubes) Uniform size for even cooking.
- 2 tablespoons Olive Oil For drizzling.
- 1 teaspoon Garlic Powder Adds flavor.
- 0.5 teaspoon Onion Powder
- 0.5 teaspoon Smoked Paprika
- 0.25 teaspoon Dried Rosemary (crushed)
- to taste Salt
- to taste Black Pepper
- optional Fresh parsley (for garnish, chopped)
Method
Preparation
- Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the sausage pieces and potato cubes.
Cooking
- Drizzle the olive oil over the sausage and potatoes. Then, add the garlic powder, onion powder, smoked paprika, crushed rosemary, salt, and black pepper.
- Toss everything together until well coated. Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for about 35-40 minutes, or until the sausage is browned and the potatoes are tender. Stir halfway through for even cooking.
- Once done, garnish with fresh parsley if you like.

Notes
