  • 1.5 lbs Italian Sausage (mild or hot, cut into 1-inch pieces) Use your preferred spice level.
  • 2 lbs Yukon Gold Potatoes (scrubbed and cut into 1-inch cubes) Uniform size for even cooking.
  • 2 tablespoons Olive Oil For drizzling.
  • 1 teaspoon Garlic Powder Adds flavor.
  • 0.5 teaspoon Onion Powder
  • 0.5 teaspoon Smoked Paprika
  • 0.25 teaspoon Dried Rosemary (crushed)
  • to taste Salt
  • to taste Black Pepper
  • optional Fresh parsley (for garnish, chopped)

Method

Preparation

  • Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the sausage pieces and potato cubes.

Cooking

  • Drizzle the olive oil over the sausage and potatoes. Then, add the garlic powder, onion powder, smoked paprika, crushed rosemary, salt, and black pepper.
  • Toss everything together until well coated. Spread the mixture on a baking sheet in a single layer.
  • Roast in the preheated oven for about 35-40 minutes, or until the sausage is browned and the potatoes are tender. Stir halfway through for even cooking.
  • Once done, garnish with fresh parsley if you like.

Notes
