  • 12 pieces Potstickers (homemade or frozen)
  • 4 cups Chicken or Vegetable Broth
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped) For garnish
  • 1/4 cup Green Onions (sliced) For garnish

Method

Preparation

  • In a large pot, heat a little oil over medium heat. Add the minced ginger and garlic, cooking until fragrant (about 2 minutes).
  • Pour in the chicken or vegetable broth and coconut milk, stirring to combine.
  • Bring the mixture to a gentle simmer.
  • Add the potstickers and cover the pot. Let them cook for about 5-7 minutes, or until heated through.
  • Stir in the soy sauce and lime juice. Taste and adjust seasonings if necessary.
  • Serve the soup hot, topped with fresh cilantro and green onions.
