Method
Preparation
- In a large pot, heat a little oil over medium heat. Add the minced ginger and garlic, cooking until fragrant (about 2 minutes).
- Pour in the chicken or vegetable broth and coconut milk, stirring to combine.
- Bring the mixture to a gentle simmer.
- Add the potstickers and cover the pot. Let them cook for about 5-7 minutes, or until heated through.
- Stir in the soy sauce and lime juice. Taste and adjust seasonings if necessary.
- Serve the soup hot, topped with fresh cilantro and green onions.

Notes
If you have leftovers, store them in an airtight container in the refrigerator. This soup will keep well for about 2-3 days.
