- 6 large large eggs
- 1 cup cottage cheese
- 2 cups fresh spinach, chopped Squeeze out excess moisture before adding.
- 1 cup mushrooms, sliced
- 1 medium onion, diced
- 1/2 cup feta cheese, crumbled Can substitute with other cheeses.
- Salt and pepper to taste
- Olive oil or cooking spray for greasing
Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, heat a bit of olive oil over medium heat and sauté the onions and mushrooms until softened.
- In a mixing bowl, whisk together the eggs and cottage cheese.
- Stir in the sautéed onions and mushrooms, spinach, feta cheese, salt, and pepper.
- Pour the mixture into a greased baking dish.
Baking
- Bake for 30-35 minutes or until set and lightly golden on top.
- Allow to cool slightly before slicing. Serve warm or store for meal prep.

Notes
