  • 1 cup cottage cheese

Method

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat a bit of olive oil over medium heat and sauté the onions and mushrooms until softened.
  • In a mixing bowl, whisk together the eggs and cottage cheese.
  • Stir in the sautéed onions and mushrooms, spinach, feta cheese, salt, and pepper.

Baking
