Ingredients
- A minimalist display of berries on separate plates surrounding cottage cheese berry ice cream
- 1½ cups full-fat cottage cheese
- 2 cups frozen berries strawberries, blueberries, raspberries, or mix
- 2 –3 tbsp honey or maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
Method
- 1. Add all ingredients to a high-speed blender.
- 2. Blend on high for 2–3 minutes until completely smooth and creamy.
- 3. Taste and adjust sweetness, if desired.
- 4. Enjoy immediately for soft-serve texture.
- 5. For scoopable ice cream, pour into loaf pan, cover, and freeze 3–4 hours.
- 6. Let sit at room temp for 10 minutes before scooping.
