- 2 pieces chicken breasts, boneless and skinless
- 1 cup cottage cheese Use low-fat for a lighter option.
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese Divided for layering.
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- to taste Salt and pepper
- 2 tablespoons olive oil
- to taste Fresh basil for garnish Optional.
Method
Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, garlic powder, and oregano.
Cooking
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts for about 5-7 minutes on each side until golden brown.
- Remove the chicken from the skillet and place them in a baking dish.
- Spread the marinara sauce evenly over the chicken.
- In a bowl, mix the cottage cheese and half of the mozzarella cheese. Spoon this mixture over the marinara sauce.
- Top with the remaining mozzarella cheese and sprinkle the Parmesan cheese on top.
- Bake for 25-30 minutes until the cheese is bubbly and the chicken is cooked through.
- Let it cool slightly before serving. Garnish with fresh basil if desired.

Notes
