  • 2 pieces chicken breasts, boneless and skinless
  • 1 cup cottage cheese Use low-fat for a lighter option.
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese Divided for layering.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to taste Fresh basil for garnish Optional.

Method

Preparation

  • Preheat your oven to 375°F (190°C).
  • Season the chicken breasts with salt, pepper, garlic powder, and oregano.

Cooking

  • Heat olive oil in a skillet over medium heat. Sear the chicken breasts for about 5-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and place them in a baking dish.
  • Spread the marinara sauce evenly over the chicken.
  • In a bowl, mix the cottage cheese and half of the mozzarella cheese. Spoon this mixture over the marinara sauce.
  • Top with the remaining mozzarella cheese and sprinkle the Parmesan cheese on top.
  • Bake for 25-30 minutes until the cheese is bubbly and the chicken is cooked through.
  • Let it cool slightly before serving. Garnish with fresh basil if desired.

Notes
