Lasagna Ingredients
- 9 pieces lasagna noodles Cook according to package instructions.
- 2 cups cottage cheese Can be substituted with ricotta cheese.
- 2 cups shredded mozzarella cheese Use fresh for best results.
- 1 cup grated Parmesan cheese Reserve some for topping.
- 2 cups spinach Optional; can add other vegetables if desired.
- 4 cups marinara sauce Store-bought or homemade.
- 1 piece egg Helps bind the cheese mixture.
- to taste Salt and pepper Season to your preference.
- 1 tablespoon olive oil For greasing the baking dish.
- Fresh basil for garnish Adds fresh flavor when serving.
Method
Preparation
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a bowl, mix together the cottage cheese, egg, salt, pepper, and half of the Parmesan cheese.
Assembly
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer 3 lasagna noodles over the sauce.
- Spread half of the cottage cheese mixture over the noodles, then add a layer of spinach (if using) and a third of the mozzarella cheese.
- Repeat the layers (sauce, noodles, cottage cheese mixture, spinach, mozzarella).
- Top with the last layer of noodles, remaining marinara sauce, mozzarella, and the rest of the Parmesan cheese.
Baking
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for another 15 minutes until the cheese is bubbly and golden.
- Let rest for 10 minutes before serving. Garnish with fresh basil.

Notes
For a healthier version, use whole wheat noodles. Add red pepper flakes for spice or other vegetables like mushrooms for extra flavor. Leftovers can be reheated easily.
