Waffle Batter

  • 1 cup cottage cheese Use thick cottage cheese for better texture.
  • 2 large eggs Room temperature eggs will help the batter blend smoothly.

  • ½ teaspoon garlic powder This adds flavor to the batter.
  • ½ teaspoon Italian seasoning Feel free to adjust based on your taste.
  • ¼ teaspoon fine sea salt Adjust if using salted cottage cheese.
  • ¼ teaspoon baking powder Helps the waffles rise.

Filling

  • ¼ cup thick marinara or pizza sauce Choose your favorite brand or homemade.
  • ¾ cup shredded mozzarella cheese This can be substituted with any cheese of your choice.

Method

Preparation

  • Preheat your waffle maker to medium-high heat.
  • In a blender, combine cottage cheese, eggs, flour, garlic powder, Italian seasoning, salt, and baking powder. Blend until smooth.
  • Lightly grease the waffle maker with cooking spray or oil.

Cooking

  • Pour 2–3 tablespoons of batter into the center of the waffle iron and spread slightly.
  • Add 1–2 tablespoons of marinara or pizza sauce to the center, keeping it away from the edges.
  • Sprinkle a generous pinch of mozzarella over the sauce, then cover with a thin layer of batter to seal.
  • Close the lid and cook for 4–5 minutes, or until the waffle is golden brown and crispy.
