Method
Preparation
- Preheat your waffle maker to medium-high heat.
- In a blender, combine cottage cheese, eggs, flour, garlic powder, Italian seasoning, salt, and baking powder. Blend until smooth.
- Lightly grease the waffle maker with cooking spray or oil.
Cooking
- Pour 2–3 tablespoons of batter into the center of the waffle iron and spread slightly.
- Add 1–2 tablespoons of marinara or pizza sauce to the center, keeping it away from the edges.
- Sprinkle a generous pinch of mozzarella over the sauce, then cover with a thin layer of batter to seal.
- Close the lid and cook for 4–5 minutes, or until the waffle is golden brown and crispy.
