- 1 pound ground beef Can substitute with ground turkey or chicken.
- 1 can (15 oz) kidney beans, drained and rinsed Can substitute with black beans.
- 1 can (15 oz) corn, drained
- 1 can (10.5 oz) cream of mushroom soup Can substitute with vegetable broth for vegetarian option.
- 1 cup shredded cheddar cheese Can use other types of cheese like Monterey Jack.
- 1 bag (32 oz) tater tots For a crispier top, bake a few minutes longer.
- 1 teaspoon garlic powder
- Salt and pepper to taste
Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Stir in the kidney beans, corn, cream of mushroom soup, garlic powder, salt, and pepper. Mix well.
- Transfer the mixture to a greased 9x13 inch baking dish.
- Top with an even layer of tater tots.
- Sprinkle shredded cheddar cheese over the top.
- Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
- Let cool for a few minutes before serving.
