Ingredients
Pasta and Broccoli
- 8 oz penne or rotini pasta Use your preferred pasta shape.
- 3 cups broccoli florets Fresh or frozen can be used.
Creamy Sauce
- 2 cups vegetable or chicken broth Choose broth based on dietary preference.
- 1 cup heavy cream Can be substituted with half-and-half or plant-based cream for a lighter version.
- 1/2 cup grated Parmesan cheese For a dairy-free alternative, use nutritional yeast.
Aromatics and Seasonings
- 2 cloves garlic, minced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
Method
Cooking
- Heat the oil or butter in a large pot over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the pasta and broth to the pot, bringing it to a boil.
- Once boiling, reduce the heat to a simmer.
- Stir in the broccoli halfway through the pasta cooking time.
- Once the pasta is tender, mix in the heavy cream and Parmesan cheese.
- Season with salt and pepper to taste.
- Serve warm and enjoy your meal!
