Ingredients

Pasta and Broccoli

  • 8 oz penne or rotini pasta Use your preferred pasta shape.
  • 3 cups broccoli florets Fresh or frozen can be used.

Creamy Sauce

  • 2 cups vegetable or chicken broth Choose broth based on dietary preference.
  • 1 cup heavy cream Can be substituted with half-and-half or plant-based cream for a lighter version.
  • 1/2 cup grated Parmesan cheese For a dairy-free alternative, use nutritional yeast.

Aromatics and Seasonings

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Method

Cooking

  • Heat the oil or butter in a large pot over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the pasta and broth to the pot, bringing it to a boil.
  • Once boiling, reduce the heat to a simmer.
  • Stir in the broccoli halfway through the pasta cooking time.
  • Once the pasta is tender, mix in the heavy cream and Parmesan cheese.
  • Season with salt and pepper to taste.
  • Serve warm and enjoy your meal!
