  • 2 cups cooked chicken (fresh, leftover, or rotisserie)
  • 1 cup cheddar cheese, shredded
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnishing

Method

Preparation

  • In a large pot, sauté the onions and garlic until they are translucent.
  • Add the chicken, chicken broth, diced tomatoes, corn, black beans, cumin, chili powder, salt, and pepper to the pot.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add in the cream cheese and cheddar cheese, stirring until melted and well combined.
  • Serve hot, garnished with tortilla strips.

Notes
