Method
Preparation
- Begin by placing the cottage cheese in a blender or food processor.
- Add the fresh raspberries, honey or maple syrup, and vanilla extract (if using).
- Blend the mixture until itβs smooth and creamy, stopping to scrape down the sides if needed.
- Taste the mousse and adjust the sweetness if desired by adding more honey or syrup.
- Spoon the mousse into serving bowls.
- Top each serving with additional fresh raspberries and a mint leaf for garnish.
- Refrigerate for about 30 minutes to chill before serving.
