Ingredients
For Cooking
- 1 tbsp olive oil for searing
- 4 pieces chicken thighs bone-in or boneless, skinless preferred
For the Cream Sauce
- 1 cup heavy cream
- 4 oz cream cheese softened
- 1 cup chicken broth homemade or store-bought
- 3 cloves garlic minced
- ½ cup parmesan cheese grated
- 1 tbsp Italian seasoning
For Serving
- 2 cups spinach fresh, added at the end
Method
Preparation
- In a skillet, warm the olive oil over medium heat. Get it nice and hot before adding the chicken for that perfect golden sear.
- Add the chicken thighs to the skillet. Cook until they’re golden brown on both sides, about 4-5 minutes per side.
- In a bowl, blend the heavy cream, cream cheese, chicken broth, minced garlic, grated parmesan, and Italian seasoning until smooth and creamy.
Cooking
- Place the seared chicken thighs in your crockpot. Pour the luscious cream sauce over them.
- Cover the crockpot and cook on low for 6 hours or high for 3 hours.
- About 30 minutes before serving, fold in fresh spinach.
