Ingredients

For Cooking

  • 1 tbsp olive oil for searing
  • 4 pieces chicken thighs bone-in or boneless, skinless preferred

For the Cream Sauce

  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup chicken broth homemade or store-bought
  • 3 cloves garlic minced
  • ½ cup parmesan cheese grated
  • 1 tbsp Italian seasoning

For Serving

  • 2 cups spinach fresh, added at the end

Method

Preparation

  • In a skillet, warm the olive oil over medium heat. Get it nice and hot before adding the chicken for that perfect golden sear.
  • Add the chicken thighs to the skillet. Cook until they’re golden brown on both sides, about 4-5 minutes per side.
  • In a bowl, blend the heavy cream, cream cheese, chicken broth, minced garlic, grated parmesan, and Italian seasoning until smooth and creamy.

Cooking

  • Place the seared chicken thighs in your crockpot. Pour the luscious cream sauce over them.
  • Cover the crockpot and cook on low for 6 hours or high for 3 hours.
  • About 30 minutes before serving, fold in fresh spinach.
