- 1 pound gnocchi Frozen gnocchi can be used as well.
- 1 cup heavy cream
- 2 cups baby spinach Substitute with other greens like kale or swiss chard.
Method
Preparation
- In a large pot, heat olive oil over medium heat.
- Add the Italian sausage and cook until browned.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Pour in the chicken broth and bring to a simmer.
- Add the gnocchi and cook until they float to the surface, about 2-3 minutes.
- Stir in the heavy cream and spinach, then season with salt and pepper.
- Serve hot, garnished with parmesan cheese.
