  • 1 pound gnocchi Frozen gnocchi can be used as well.
  • 1 cup heavy cream
  • 2 cups baby spinach Substitute with other greens like kale or swiss chard.

Method

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the Italian sausage and cook until browned.
  • Add the diced onion and minced garlic, cooking until the onion is translucent.
  • Pour in the chicken broth and bring to a simmer.
  • Add the gnocchi and cook until they float to the surface, about 2-3 minutes.
  • Stir in the heavy cream and spinach, then season with salt and pepper.
  • Serve hot, garnished with parmesan cheese.
