- 1 cup orzo pasta
- 1 tablespoon olive oil
- 2 pieces chicken sausages, sliced
- 1 piece onion, chopped
- 2 cups spinach Fresh or frozen
- 1 cup corn Fresh or frozen
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Method
Cooking
- In a large pot, heat olive oil over medium heat.
- Add the sliced chicken sausage and cook until browned.
- Stir in the chopped onion and sauté until translucent.
- Add the orzo and stir to combine.
- Pour in the chicken broth, then add the corn and season with salt and pepper.
- Bring to a boil, then reduce heat and let it simmer for about 10-12 minutes until the orzo is cooked and the broth is mostly absorbed.
- Stir in the spinach until wilted.
- Remove from heat and sprinkle with grated Parmesan before serving.

Notes
