  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 2 pieces chicken sausages, sliced
  • 1 piece onion, chopped
  • 2 cups spinach Fresh or frozen
  • 1 cup corn Fresh or frozen
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Method

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the sliced chicken sausage and cook until browned.
  • Stir in the chopped onion and sauté until translucent.
  • Add the orzo and stir to combine.
  • Pour in the chicken broth, then add the corn and season with salt and pepper.
  • Bring to a boil, then reduce heat and let it simmer for about 10-12 minutes until the orzo is cooked and the broth is mostly absorbed.
  • Stir in the spinach until wilted.
  • Remove from heat and sprinkle with grated Parmesan before serving.
