Ingredients

  • 4 fillets Salmon fillets
  • 2 tbsp Butter For cooking the salmon
  • 3 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 4 cups Fresh spinach
  • 1 cup Parmesan cheese, grated
  • 1/4 cup Fresh basil, chopped For garnish
  • to taste Salt
  • to taste Pepper
  • 1 cup Heavy cream

Method

Cooking Salmon

  • In a large skillet, melt butter over medium heat.
  • Season salmon fillets with salt and pepper and add them to the skillet, cooking for about 5-6 minutes on each side until golden brown and cooked through.
  • Remove salmon and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and sauté until fragrant.
  • Add cherry tomatoes and cook until they start to soften.
  • Stir in spinach and cook until wilted.
  • Pour in heavy cream and stir in grated parmesan cheese until smooth.
  • Return the salmon to the skillet, spooning the creamy sauce over the fish.
  • Garnish with fresh basil and serve immediately.
